Sweet potato toast with microgreens
2 medium sweet potatoes
4 organic or farm fresh eggs
1-2 tsp honey
1 cup organic spinach (or other greens)
1 radish cut into matchsticks
1-2 Tbsp sundried tomatoes
1 handful microgreens (any variety!)
feta for garnish
salt and pepper
red pepper flakes
Wash your sweet potatoes and slice them into quarter inch slices long ways. Put them in your toaster and toast as normal bread! You may need to toast several times to toast all the way through. You'll know it's done when you can pierce easily with a fork.
Scoop our your avocado and mash with a fork. Add your salt and pepper and honey to taste. You may add the lemon juice for some acidity to bring out the flavors.
For the eggs you can fry them over easy, sunny side up, poach them or soft boil them - whichever you prefer!
Once your eggs are cooked and your sweet potatoes are toasted, it's time to assemble! Start with your sweet potato toast and top with greens, avo mash, radish, sundried tomatoes, feta, one egg, microgreens and red pepper flakes. Pierce egg with a sharp knife and let it ooze! Enjoy!
