scrambled egg breakfast tacos
Ingredients
3 eggs
3 corn tortillas
1/2 bell pepper, diced
1/4 cup purple cabbage, diced
1/2 cup sauerkraut
1 tbsp cilantro
Handful of microgreens
Sweet potato fries (optional)

Instructions
Scramble eggs over low heat for three minutes, stirring constantly until just solidified.
Place on top of corn tortillas and top with bell pepper, cabbage, cilantro, microgreens & sauerkraut.
Pair with sweet potato fries (optional).
