Poached eggs with tomato, avocado & Microgreens

Ingredients

Whole wheat baguette, toasted

Mashed avocado

Microgreens (any variety!)

Roasted tomatoes

Poached eggs

Sprinkle of black pepper

Instructions

Top a slice of toasted baguette with avocado, microgreens, tomatoes and a poached egg. Sprinkle black pepper on top and enjoy!
