Breakfast salad bowl

1 Handful mixed microgreens

2 soft-boiled eggs

1/2 avocado, sliced

1/2 cucumber, sliced

2 tbsp beet hummus

fresh lemon juice, to taste

olive oil, to taste

salt and pepper, to taste

Add greens to a large bowl and top with soft-boiled eggs, avocado, cucumber and beet hummus. Season with lemon juice, olive oil and salt and pepper and enjoy.
